Can you imagine the heartache of witnessing your loved ones go hungry? I know this reality all too well.
I’m Rafat Ramadan, and I along with my dedicated team in Khan Younis, South of Gaza City, Palestine, have initiated the Al Saada Open Kitchen. With vital aid blocked at the borders and insufficient resources to combat famine, we took decisive action.
Led by my colleagues Mazen Yaseen , Mohamed Abd, and Mohamed Abu Obaid , and other committed volunteers.
our mission began with establishing a soup kitchen to provide nourishing meals to our neighbors in need. Equipped with four large pots, firewood, and a determination to succeed, we harvested potatoes and sourced essentials like tomato paste and cooking oil. Within hours, 120 families had sustenance, growing to 150 families the next day.
Word quickly spread, and more families arrived daily. Kamal tirelessly sourced fresh ingredients—leafy greens, onions, and mushrooms—to create meals that were not only nourishing but also comforting. Today, our kitchen operates at full capacity, serving up to 3500 persons daily, marking a significant change for many who hadn’t enjoyed a substantial meal in days, shifting away from canned food to freshly prepared dishes that fill hearts with gratitude.
You might wonder how we manage to sustain this amidst Gaza’s challenges. Khan Younis hosts farms with seasonal vegetables and wild greens. Financial support ensures prompt purchase of these essentials from local markets. Our proximity to the market hub allows us to swiftly secure vegetables and cooking necessities. We’ve even ventured near the Green Line, where luck occasionally finds us with overgrown zucchinis that would have otherwise gone to waste.
